I just found a french site dedicated to making sorbets and icecreams at home ^__^
so I'm going to be translating a few that i think are most relevant and putting them here, and following it up with icecream cup recipes that i find tasty

Important info: you will require a very rudementary icecream maker for this--
there are the ice and salt machines that are said to be a little messy so it's best you do what you need to do outside but other than that they should work great 👍 many tutorials online on how to use them and they can make biiiig portions
if you find one that's one part freezer bowl one part thing that churns the content in said freezer bowl like the Cuisinart ICE-21 that works great too (and cost you less in ice and salt)
the other thing is this may mean you need to freeze the freezer bowl at least 8h in advance or overnight before starting and that you cant do batches back to back
it's also important to note you may need an electric wisk to wisk up egg whites and other such, i just think it's an investment worth making esp when they cost so cheap second hand (2 dollars secondhand appliances i love you. i love you)
UPDATE: there's a way to do it without a machine :3
simply make the recipe like usual, then place it in your freezer
then, every hour for 4 hours, take it out and beat it up with a wisk or a fork
happy icecream-ing!
TWO ICECREAM RECIPES
CHOCOLATE ICECREAM
For around 1 Liter of icecream
Ingredients:
- 5.2 oz of chocolate (a little less than a giant-sized 6.8oz chocolate bar)
or
half a cup of sweetened cocoa powder
- 5 egg yolks
- 1/3 cup of sugar
- 1 cup milk
- 3/4 cups heavy whipping cream
- beat up the egg yolks with the sugar
- heat up the milk and cream almost til boil point, while avoiding boiling. break up the chocolate in pieces and add them, letting them melt while constantly stirring
- when the mixture is nice and even, pour it on the egg yolks while constantly stirring the mixture
- let cool down until cold or very very lightly warm, then pour into cold freezer bowl/bucket in the ice and salt machine and start the churning!
wait until mixture looks thick, then put in freezer for two to three hours to get an even more solid icecream consistency
VANILLA ICECREAM
For around 3/4 of a Liter of icecream
Ingredients:
- 1 tbsp of vanilla extract (or 1 vanilla bean)
- 4 egg yolks
- 1/2 cup of sugar
- 1 cup milk
- 3/4 cups heavy whipping cream
- beat up the egg yolks with the sugar
- heat up the milk, cream and vanilla extract almost til boil point (if using vanilla bean, split in half down the middle and scrape the inside with tip of knife to release the flavor). Let infuse for 10 minutes
- pour the mixture on the egg yolks while constantly stirring
- the mixture has to be thick enough to coat your spoon and 'ribbon' when you pour it
- let cool down until cold or very very lightly warm, then pour into cold freezer bowl/bucket in the ice and salt machine and start the churning!
wait until mixture looks thick, then put in freezer for two to three hours to get an even more solid icecream consistency
TWO SORBETS RECIPES
Note about sorbets: lemon juice is almost always present in all recipes as it gives a fluffier consistancy. egg whites beaten into stiff peaks serve that same purpose as well
LEMON SORBET
For around 3/4 of a Liter of sorbet
Ingredients:
- 4 big lemons
- 3/4 cup of sugar
- 2 egg whites
- 1 cup water
- in a pan, heat the the sugar, water and lemon juice together until you have a syrup. bring to a boil and turn the fire off when the sugar is completely integrated into the mixture
- beat the egg whites into stiff peaks, delicately mix them with the syrup after it's cooled down a little
- let cool down until cold or very very lightly warm, then pour into cold freezer bowl/bucket in the ice and salt machine and start the churning!
wait until mixture looks thick, then put in freezer for one to two hours to get an even more sorbet consistency
BLACKCURRANT SORBET (I tried this one and highly recommend it ^u^)
For around 3/4 of a Liter of sorbet
Ingredients:
- 3 cups blackcurrants
- 1 lemon
- 1/2 cup of sugar
- 1 egg white
- 3/4 cups water
- in a pan, heat the the sugar, water and lemon juice together and bring to a boil. once the sugar is completely integrated to the mixture, add the blackcurrant berries and leave on low heat for 5 minutes
- pass the syrup through a strainer to get rid of the skin
- beat the egg white into a stiff peak, delicately mix them with the syrup after it's cooled down a little
- let cool down until cold or very very lightly warm, then pour into cold freezer bowl/bucket in the ice and salt machine and start the churning!
wait until mixture looks thick, then put in freezer for one to two hours to get an even more sorbet consistency
MY SUPER TASTY SIMPLE ICECREAM CUP RECIPES
'DAME BLANCHE'
drizzle some chocolate on the inside of your cup, put 2 scoops vanilla icecream, whipped cream on top and drizzle chocolate on top again
absolutely divine with homemade melted chocolate sauce but u gotta eat it quick then ^__^
CHOCOLATE 'lIEGEOIS', COFFEE 'lIEGEOIS'
same thing as a dame blanche but with chocolate icecream or coffee icecream!
'COLONEL' (dumb name also this one's got alcohol be warned)
normally done with lime sorbet, but you can do it with lemon too. put two scoops lemon or lime sorbet, 5 tablespoons of vodka and whipped cream on top
Why not do a BANANA SPLIT for snack time? :3 You can do it with only two bananas, 1 scoop homemade chocolate icecream, 1 scoop vanilla and 1 scoop blackcurrent sorbet!
